Fall = Plaid



Hey Guys!! long time no see.... I have been MIA I know, I have had a lot going on and trying to manage it all was becoming too stressful.  So I am slowly getting myself together and I will be back to posting probably not as often as I used to until I truly get into the swing of things, and I hope that you bear with me while I get into a routine of handling everything.  So enough about that now on to the outfit.  So fall is here and I am sure you all know that plaid is in! I know that this will become a staple piece in my fall wardrobe.  For this outfit I decided to go for a casual look pairing it with skinny jeans and my new favorite booties.  How are you rocking the plaid trend??

Yummy Eats: Chewy Nutella Cookies

Hey... me again bringing you this quick blog post on these delicious cookies I made this afternoon.  I was browsing through Pinterest (yes I am highly addicted to it) and my son who was supposed to be taking his nap said oh I want to eat that so I told him if he goes to sleep then I would make them for him.  He walked right to his rom and just went to sleep.... so when he woke up of course he asked for the cookies, and since I told him I would make them if he went to bed I had to follow through.   These were delicious! and the recipe made a boatload of them.





Ingredients
  • ½ cup unsalted butter, at room temperature
  • ½ cup granulated sugar
  • ½ cup firmly packed light brown sugar
  • ½ cup Nutella
  • 1 egg
  • 1 tsp. vanilla
  • 1 ½ cups flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1/3 cup mini chocolate chips
Directions
  1. Preheat oven to 350F.
  2. Cream butter with both sugars until light and fluffy. Stir in the egg, vanilla, and Nutella.
  3. Add the flour, baking soda, and salt into the wet mixture until just combined. Fold in the chocolate chips.
  4. Drop the dough by tablespoons onto baking sheet and bake for 6-7 minutes.

Yummy Eats: Salmon with Sauteed Spinach & White Beans

Hey Gals and Guys! How is everyone Saturday so far? I love finding healthy food to eat I had some spinach in the fridge that I needed to use ASAP and I knew that I wanted to have white beans as well so I went to good ol' Pinterest and found an easy recipe for sauteed spinach and white beans.  It was an easy to make recipe. 





Ingredients:
  • 4 strips bacon, diced (I used crumbled bacon bits)
  • 1 tablespoon olive oil
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 2 cans Northern white beans, rinsed and drained
  • 4 cups baby spinach leaves, rinsed
  • ¼ cup white wine
  • salt & pepper, to taste
Directions:
  1. Heat a large pan over medium heat and cook diced bacon until crispy for about 5 minutes, stirring occasionally.  Remove bacon from pan and place in a small bowl.  Leave bacon grease in the pan.
  2. Add olive oil to the pan and saute diced onion and garlic until soft, approximately 2-3 minutes.  Add beans and spinach.  Cook until spinach is wilted, approximately 5 minutes, stirring occasionally.
  3. Add white wine to the pan with other ingredients and bring to a boil.  Remove from heat and season to taste with salt and pepper. Serve.
Yield:  4 main dish-sized servings or 8 side dish servings
Recipe adapted from Teenage Taste.
For the salmon I just seasoned it with a little bit of salt, sprayed the pan with extra virgin olive oil and cooked each side for 3-4 minutes on each side.

Served it with the spinach and bean side and some lemon. YUMMO!!

Keeping It Simple!


Hey Guys I bring you a keeping it simple outfit because sometimes less is more.  I kept it simple with a pair of skinny jeans with a black tank and these fab leopard flats with I bought for less than $10 bucks!! The leopard flats I feel give this outfit a little umph... this is the perfect mommy on the outfit. What pieces do you go to for a simple yet chic outfit?

Yummy In My Tummy: Double Chocolate Zucchini Muffins!

Hey everyone! this is my first food recipe that I will be sharing.  As you know I have decided to make this a lifestyle blog so I am going to incorporate yummy healthy recipes and some fitness topics. 

I made this yummy recipe yesterday, as a mom I always want my kids to eat their veggies and we all know that sometimes does not work out the way we want and they often turn their nose without even trying.  So as a way to have some veggies in their diet I found this recipe from Fresh Mama I really love Lilias food blog because it has simple, delicious, and easy to make healthy recipes (you must check her out).





Double Chocolate Zucchini Muffins
3 eggs
1 1/2 cups sugar
1 cup vegetable oil
1/3 cup unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
2 cups grated zucchini
1 1/2 cups all-purpose flour
1 1/2 cups whole-wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup chocolate chips, plus more for sprinkling on top

1. Preheat oven to 350 degrees, line muffin tins with liners (a great job for little ones)
2. In a large bowl, mix eggs, sugar, oil, cocoa powder, vanilla, and zucchini.
2. In a different bowl, whisk together the flours, baking soda, baking powder, salt, cinnamon, nutmeg.
3. Add wet ingredients to dry ingredients and mix until just combined.
4. Fold in chocolate chips.
5. Fill muffin tins 2/3 full, then sprinkle with 3-4 chocolate chips/muffin.
6. Bake for 22-25 minutes until toothpick inserted in middle comes out clean. Allow to cool on wire rack. Cool completely if freezing. 



Enjoy!

This recipe makes a whopping 24 muffins so it is great if you have a birthday or an event where you have to bring something.  The kids absolutely loved these and they couldn't even tell that they had zucchini in the muffin which a great for me... I think I will incorporate grated zucchini in more baked goods.
